My 2012 Word

So it's the new year and I still have to pick my world to live by this year. I think it will be improve...... meaning to improve at being a better me....to improve at being in better health......to improve at being a better wife.....to improve at being a better mom. We always have something we would like to improve, this year for me I started with my office and have been slowly working at getting everything sorted out and ready for 2012. I hope this year my families health is at it's best i really can do without the white hairs. Yup I am 35 and they are start to show their little strands here and there. Steve is being really sweet by trying to tell me they are just blonde hairs. Either he is going blind or just loosing his mind. I've never had a blonde hair nor will I ever.

I ended up getting side tracked on my Dr. Poon's lifestyle change but soon reality hit and I need to get back on track. Last few days I have been back to drinking my water and eating my Poon style food. Boy did I miss it. Sounds funny as some of you are thinking I am nuts but when you are used to one thing for so long when you get off for a while you need the feeling of having control again.

Off I go to get some typing done. Met with one of my brides and grooms tonight and they were so sweet bringing me a Starbucks....my favorite caramel brule. I thought it was so sweet when I found out the groom called the store and found out what I drink just so it would make my night. It really did but now I am so tried I want to sleep. Funny as coffee is suppose to keep you up. I guess having so many of them really reverses the process.

Happy New Year! I am so thankful that 2011 is done and over with. I am praying that 2012 the year of the Dragon is going to be much better. It's so far starting to be a great year. Business is good, spending time with my family, and of course getting my life back in order so that when things get crazy again next week I am prepared to take on the world.

Today I decided to get groceries this morning, cleaned up in my room (business area) and just organized all my coupons with a new quick system. Yeah I do not have as many as I use to but there are enough that I need to have them organized so that I can start using them again. The system is a simple one and didn't cost a lot just about a dollar. I purchased 100 envelopes 3 5/8" x 6.5" at the dollar store and printed off labels in word with the following categories

It's was easy and took only about 5 minutes to get all the labels on the fronts of the envelopes and stuff them with the correct coupons. I am ready for my next shopping trip.

Even had the chance to speak with my Bermudian cousins and auntie. I could not believe I almost spoke to everyone except my cousin Mikey and my 2 uncles. Everyone looked great and I was so delighted I was able to speak with them over Skype. If you don't have skype you need to download it quickly.

Better get going as I am on the end of my second glass of champagne and still need to finish cleaning this area before going to bed.

November already

It's already November. I can't even believe Thanksgiving is gone, Halloween a thing of the past and now we are listening to Christmas music and already thinking of what we will be doing on Christmas Eve. This year has been extremely busy. I can not even believe how busy I have been with the kids, my dad, the school, the business and life in general. Our family trip to Disney feels like a thing of the past....actually I already need another vacation. The boys have all requested Hawaii but I am thinking of taking them to anywhere hot and all I will be doing is relaxing. Who am I kidding.

The boys are growing, life is super busy and I have to find a creative way to get Christmas shopping done.

10 Years Ago Today

It seams like we all remember seeing the pictures of the twin towers coming down just yesterday but in reality it was 10 years ago. What a sad day. I just wanted to come and post a message because the sadness has been in my heart all day. Can't believe we are so close to leaving on our family trip. Thought I would come in and just update on my very crazy weekend. It was another Edna and Veronica adventures. We did a wedding uptown at Presidente and then had to head all the way downtown. We were one person short this weekend so Edna and I had to work fast in order to complete everything. So off we went to Harbourfront Chinese Restaurant. I have never been there and did not know what to expect. The manager tells me to park in the little driveway. I proceed to head over to the little driveway and it's the boardwalk. People are moving out of the way and looking at me like I am nuts. At this point Edna and I know we are in the wrong area. I make the decision to leave the car right there (with blinkies on) and leave there to watch for the car. I start walking into this building that looks like a shopping centre. Well, to my surprise it is a shopping mall. I think oh my I must be in the wrong place all together. A man comes up and explains that the restaurant is to the left, then to the right and then upstairs. I head that way with this heavy arrangement in one hand and a tall glass vase in the other. Yup, through the mall and finally get to the elevator and ask another man where this restaurant is and he points to the food court. You've got to be kidding me is running thou my mind right now. Get up there and sure enough I am in the right place. Asked the manager there to send me a couple of guys to bring up the items. Done, now I want to get the heck outta there. Get in the car to see Edna was so nervous she chewed off all her shellaced nails....lol We are trying to get off this walkway and no one is moving out of the way. My car is surrounded by people. I thought this could not be happening. Well, really I was thinking I really need another Starbucks in order get thou this day. A security guy comes over and stops people and traffic for us to get out. Thank God! I have totally forgotten what it is like to drive downtown. Thankfully I really do not do a lot of weddings down there. We keep them more to the Vaughan area. Whew!!

My family also checked out a new restaurant called Sofra Grill located at Dufferin just north of Langstaff. We headed out for dinner with my sales rep. Tal. We truly had a wonderful time and the food was great. I had the salad with grilled chicken breast. No word of a lie the chicken on top was 5 huge pieces. I can't wait to go back. Yum-O! Thanks Tal.

We are still on Saturday and I get home and I am wired. Checked out who's on my bbm and get talking to Aimee (Edna's Sister) and she asks if we should get a girls night started right now. Well, why not. Edna, Aimee and myself had a wonderful time sipping wine (yes, I had diet coke) shellacing and just chatting the night away.

Right about now you think after 1 sympathy delivery to Kettleby at 9 am, 2 weddings, dinner out and girls night I should be about ready to go to sleep. Well, no I still had to go to my night pick up from one of the weddings. Met up with Nikki at 12:30 am and waited until 1:30 am to pack up everything.

Got home at 2 am and I was wired. What an awesome day! I just went non stop and it felt great to have a great day with my side kick Edna, my beautiful family, and my friends. Thanks to all who made my day a special one. Love you all.

August Already

It's hard to believe July is gone and we are here in August. I am busy here with events, taking care of appointments with my dad, entertaining the kids. I finally buckled and put the kids in camp for a week so I can get some work done. Today was day 2 and let me tell you my office is clean. Yup, you read it right clean. I love saying that word. I am sure hubby is also happy that it is clean. I am surprised he hasn't said anything to me yet. Maybe it's the fact that I have been so busy and the only time I got to relax I really needed it.
I have packed Tristan, Ethan and myself for Disney. Steve is the last one. He seams to think I am nuts for packing ahead of time. Let's see who will be laughing. I have 3 to pack and he has himself. I am looking forward to our trip. We finally told the boys we were going with our friends Edna, Marlon, Jaden and Noah. I am looking forward to spending time with the B family in Disney. I'll certainly post pictures.

I better get going as I am paying bills on line and have to get something to eat. Have an awesome week!

Wow, it feels like forever since I have last posted. Have no idea what the problem is but I am having issues trying to post. This is why I haven't been posting often.

Let's see what's new besides me being busy like crazy. Tristan and Ethan both play soccer 4 days a week. I booked our flight our to Disney. Steve and I celebrated our 10 years of marriage. Life has been insane to say the least. I lived past June 11 which I thought I never would have. lol

I hope this posts because if it does you will all be reading a lot more from me more often.

Baking Day

Good Evening Everyone,

I am finally able to come on here more than once a month. Life has been insane. I now have a 8 year old. I still can't believe my little or I should say my biggest boy is now 8. His communion is in a couple of weeks (still not ready) and I have a million and one things still to do. Dance recital is coming up and every single weekend is booked solid for me. I am going crazy.

Today I spent the day with some of my girlfriends (moms of the school) and we baked for our schools blessing this upcoming Wednesday night. We had a wonderful time. Ended up making hundreds of cookies in 7 hours but finished every single one of them. Thanks to all the wonderful moms who came out. I have enjoyed all of our baking and hope that everyone enjoys our cookies on Wednesday night.

I am delighted to see everyone posting about the meal plan. Once I get a little more time I will update it as I have a ton and a half of stuff that I have added to my daily plan. I would love to include it into an updated one. If you are requesting a meal plan please include your e-mail. If you don't I have no way of getting the information to you.

Rainy Days

Hello Fellow Bloggers and Pooners,

Hope you are all doing well. I am sitting here at Princess Margaret Hospital in Toronto with my dad. We have been here way too long but just as long as dad gets outta of this ok it will make me happy. I have been on a downer as everything is piling up on me and I fell like I have no time for anything but my dad, my family, my business, and the school. I am prepping for my own sons communion in about 28 days and I feel like I am not even ready for it. Just finished filing my taxes 3 days ago and that was a huge ordeal. Wish we didn't have to do it but I guess it's been so many years I should be use to it by now.

I am so excited for Tristan's communion as it's coming up. I have his suit, shoes and socks purchased just waiting to find that perfect shirt and tie. Where of where will I find a peacock themed tie. I want the colours that you would find in a peacock feather. Let me tell you the ladies at zero 20 looked at me like I had 20 heads. lol The linens have been ordered and I already know what I will be doing for the flowers. I can't wait to see it all together. My dear friend Sonia will be creating a cake for him. I can't wait to see what it looks like. It will be beautiful. My big boy is growing up so fast. He had his 8th birthday on Friday. We had his birthday parties on Saturday. What a wonderful time we all had. I fell in love with two of his little friends, Christine (my daughter in-law; lol) and Ariana my girlfriend Rita's girl. They were so sweet it was unreal. If I had a girl this is what I want her to be like. Not saying I am going to have anymore. I am done.

I can't believe it's already April. We've been having a lot of fun here with the boys these days. They are growing up fast and I am trying to keep up with all the work I have on my plate. I've created my new website www.designsbyveronica.ca and still need a little more work on it but for now at least I have something up. I have been trying to keep up with my Poon lifestyle. No I haven't gone crazy on regular food, still watch what I eat everyday. I love that I have learned more about what is good for me and what my body just can not handle. I have so much coming up. Tristan's birthday and communion. I still have to figure out what I will be wearing for his communion. Better yet I still haven't gotten his suit. I guess this is what is on the agenda for the next couple of weeks. Just wanted to say hi as we are off to my sisters to celebrate my mothers birthday.

February Update

Feels like it has been forever that i have come on here and given you all an update of any kind. Life always has it's way of throwing you a curve ball. Well, if I thought it was all running smoothly and nothing interesting was happening besides me changing my eating habits/starting to exercise and my crazy business. My dad is ill and I have been focusing on his health. I have events coming out of my ying yang but I am doing them and am thankful that it kind of takes my minds off things. I have been sticking to my lifestyle change but haven't gone into the office for about 3 weeks. I need to call and get my life back in order. I started up at the gym by my house and did a class there 2 days ago. I am still in pain. Man, does this guy really work us.

I will try and send everyone my meal plan but you have to give me some time. There are about 25 of you still waiting for it. It's coming but will take a little while longer.

Dr. Poon: My Ricotta Surprise

I know everyone who is on the Poon lifestyle change always misses the little things in life like dessert. Well, I have news for you. Yup, I've come up with another recipe. I guess the sign of a new year comes new beginings and new recipes.

Ricotta Surpise

Ingredients:

1/4 cup - 5% Ricotta Cheese (May be purchased from Dr. Poon office or grocery store)
1 package Splenda Brand Sweetner
1/2 tsp Vanilla
1/2 tsp Sugar Free Jam (optional)

Directions:

1. Measure the ricotta cheese into a small bowl.

2. Add Splenda, vanilla and mix well.

3. Place in a wine glass or ramekin. Add jam in center and Enjoy!!

It's an awesome little dessert.

Chocolately Chai

I have just discovered President's Choice Chocolatey Chai Herbal Tea. After my morning tea at Starbucks with Rita I decided to head to the grocery store for some much needed groceries and all items I needed for the mac n cheese that Tristan requested. I was walking around in the tea isle and have wanted something different then what I normally get orange pekoe or chai. I was looking at the President's Choice because of course they were on sale and next thing you know this one caught my eye. I am thankful it did because I've had 2 so far since arriving home at 7pm from dance with the boys. Man this tea is just so nice going down and the chocolate taste is really there. I paired it up with splenda and 5% cream and it's just out of this world.

Pooners I am always on the hunt for items that we can use within our lifestyle change. This is one of them. Head out to your closest store that carries PC because it's on sale for $2.00 per box.

Ethan's New Years

I uploaded some pictures from our holiday season. I almost spit all over my computer monitor once I saw this one. What a cute little face my little man Ethan has in this picture. You can tell he is a ball of trouble just from this one picture. This is how we celebrated the new year with our boys giving us a good laugh. I hope they both continue to make us laugh well into their adult lives.

Wow, can't believe we are finally here. Happy New Year to you all! I wish 2011 brings you everything you've ever wanted plus some.

I have so much to share with you since my last post. I know I promise to start getting better at posting pictures along with just entries. Let's see new things that have happened since my last post. Chloe now walks, Tristan is 2nd lead in his dance class, Steve and I went out on a date to a cocktail party, Ethan loves school and missed it while off, Brody plays soccer like a little star (he's only 1), I actually scrapbooked and I am still on Dr. Poon.

I still have to pick my word for this year. I have no idea what it will be but I do know I want to be at my 100 pounds off mark this year. I have Tristan's communion and it's a chance to get myself where I want to be and also get something special to wear for my first born's special day. I have so much planning for this event but I am so looking forward to it. It's going to be so special for our whole family. I am also going to work extra hard because it's our 10 year wedding anniversary in June. I can't believe I first married my best friend and have been happy with him and our beautiful children for 10 years married and we've lost count on how many together. lol No, I'm joking by June it will be 18.5 years together. Wow, that is a long time but it honestly feels like just yesterday when I fell in love with him.

I was actually able to scrapbook or rather I should say make some cards. Alexis came over New Year's Day and we sat and played for hours. Then bouncing with energy we decided to go out and watch Little Fockers, OMG!!!!! it was a really cute movie. I wanted more of a laugh but hey what do we expect when they've already done 3 of these movies. I just found that it all played the same old same old. I think they need to make that their last. Out of 5 stars I would give it a 3.

Now for the Dr. Poon update. As most of you who go to the clinic know Dr. Terry Poon has decided to leave and continue family practise on his own. I was so sad to hear this and also upset at the same time. He had been there since I first started and has continued to support me. I will as of this Friday be seeing Dr. Lau. I am nervous and excited all at the same time. I know I have gained a little over the holidays since I attended many parties and did have a couple of martini's hence the new 2011 banner. lol But like I say and write to many of you, pull up your socks and let's get right back to it. I know that during the holidays it's a hard time since everyone is stuffing something or other in your face but I can honestly say I still stuck to it as much as I could. But as of Jan 2 it was time to get re-connected with my life the way I now know it. I am hoping this is the same for you. I have enjoyed reading all your e-mails and posts. I continue to cheer you all on since hearing your success only helps me to reach mine. Let's make 2011 the year of success for all of us.

Bitter Cold

Wow, the weather is certainly frightful out there. It's minus 24 today, snowy and just plain yucky. I believe I really shouldn't of been born in the winter. I think deep down I should have been born in June or July because that is the weather I love most.

I like (I am stressing like) seeing the trees dusted and the children getting excited about building the perfect snowman but boy do I hate the cold bitter wind and everything that comes with it. We mostly stayed in this weekend. I really had no desire to be out there in the middle of the storm. I even had the chance to finish all the Christmas decorating and also all my accounting. Something that rarely ever happens here.

I was also able to get together with some girlfriends last Saturday. Had a great time drinking, chatting and just enjoying each others company.

Today I spent most of the day running around. I ended up getting some more shopping done. I would have thought I would have been done by now but the chocolate fundraiser has taken over my life right now. I have been at the school for the last 3 weeks every single day and on Thursday twice. I am happy that it is over and also delighted that we hit our target and surpassed it. Great feeling that we will be able to put the funds right back into the school come January.

I have been going nuts working. I have my last wedding of the season (year) this Saturday. It also falls on my birthday. I will have to share pictures once I get them taken after all the design work.

For my Pooners....... yes, I am still following my program and trying to stick to it as much as possible. I have been enjoying some parties but as soon as those are over I go right back on the plan. I know most of you e-mail me to ask and I always answer with this is my life now and I think I am so use to it that I will continue as it is working for me. Once you honestly get use to it, it becomes so easy.

I better get going just wanted to give everyone an update as to what has been going on in my life.

I can't believe it has taken me a while to get on here. I have been receiving an insane amount of e-mails telling me the site has been down. It took me a few days to figure it out. I just had to change the template. I am going the safe bet and just using a blogger template instead of a 3rd party template. I can't believe I deleted a whole bunch of entries thinking it was exceeded. Man do I really have to read everything out there before I go ahead and delete things.

I have so much to update. I guess I should be doing that in the next few weeks.

Hump Day

Just wanted to wish everyone a good hump day. The weekend is almost here. I have a council meeting tonight. Not able to go for my walk/run tonight with Edna. I am a little disappointed but sometimes life gets in the way. I have been doing well the last two days. Fell off the wagon last weekend with Halloween and having everyone over here. It was so much fun to have my God-daughter Chloe and my nephew Brody here to celebrate their Halloween with us. The boys were so good and super cute.

I thought since I uploaded 819 pictures the other night I would post one that I did with colours I normally wouldn't put together but it turned out beautiful. This bride was a sweetie. Not sure if you remember reading on my blog about a little boy that drown in February 2009 and lived with brain damage. I had made him a scrapbook page to help him with his rehab. I was thinking about him today and sure enough checked up on his mother's blog and only to find out he passed away on July 6, 2010. Here's his story...

Dr. Poon 73 Week Update

Finally caught up here with the updates. If you've made it this far thanks for sticking with me. I am so sorry things got missed in the last few weeks. I've barely slept, eaten or done anything but work. It has been a crazy year. I love it but it is certainly taking a toll on my body. Dr. Poon has asked me to try and get more rest, less stress and make sure I eat. Starving yourself also doesn't help this lifestyle change. I gained .2 of a pound. Nothing to get excited about. So to date I have lost a total of 73.7 pounds. The doctor is a little disappointed that I have been stuck on the same weight for a couple of months but like I say I have been maintaining this weight and haven't gained large amounts it's just so busy I don't even have time to eat. I know sounds crazy but come live in my shoes for a little while. It will start to slow down soon.

I moved my appointment for this week to next week. I have tons of orders going out plus have to finish one album.

Meeting Buddy (The Cake Boss)

Where do I start but to say that date night was a huge hit. Steve and I arrived at The Queen Elisabeth Theatre and were taken upstairs to the VIP room. We were served a huge plate of sushi and spring rolls. Which was Yum-O but of course I had to watch what I ate on that plate. I only had a few pieces because I was worried about all that rice. I haven't really had rice in as long as I have been on Dr. Poon.

Here Steve and I are upstairs with our back to the stage which was super cute.

I think you can see the excitement in my face. Buddy is super nice and down to earth. I really like him and am hoping that there is a road trip in the near future. My boys are already looking forward to eating cake when we go.

What a great night! Thanks to my wonderful client. She made this girl one happy one.

Date Night

Hey Everyone,

It's been a while. I have been extremely busy. It has actually been insane here at the house. Ethan started JK full time and Tristan is now in grade 2. First day of school for Tristan was Tuesday and it started off with him losing his 7th tooth on June 7th at school. He was super excited and I am just delighted that both boys will be entertained with school. They are growing up and this will be the time that I will be able to work more (yes, I know that sounds crazy because if you know me I work a lot) without interruptions. I might even get more time to relax and get things done. Ethan started full time on Friday and I missed him. I am so use to having with me all day. Yes, I even cried and I am sure there will be no shortage of tears this upcoming full time week.

So since things are going to be busy for me until December I decided it's time to date my husband. I know it sounds funny but believe me after having 2 boys, a business and no time for each other you really just need to stop and take some time out for each other before you really do not know who that other person is. I am so excited since one of my customers gave us boxed seats to go and see Buddy The Cake Boss. I think this will be a fun night since we watch a lot of the cooking shows together. Seams like when we do get a chance to watch tv it's Big Brother, TLC or Food Network.

I am taking my camera and am hoping to get a picture or even better yet get to meet Buddy. That would totally be cool.

Good Morning

Good Morning Everyone,

By the looks of it the day is shaping out to be a better one. First I went out with Edna for our 7:00 am walk. It felt great to go out and just walk with no one else around. We enjoyed a nice walk and chat. We thought we were out for an hour and a half but it was only 55 minutes. That's ok because we can increase our walks every week. I can tell you it really just relaxed me. I got in jumped in the shower and am just sitting here blogging, surfing and just finished recording some video's with Ethan.

I know I have mentioned we have been trying to potty train the little man. Well, I can say what I thought was going to be a nightmare ended up turning into an awesome experience. He kept telling me he wasn't going to do it and I just thought I better be a little more tough with this little dude and sure enough the little man is not only in underwear full time but even at night. This feels great knowing I will never buy another diaper/pull up again and I do mean ever. I can finally say I do not have anymore babies in the house. It's sad but I am grateful to be out of this stage.

We have about 23 days before school starts for both boys. OMG!!!! What will I be doing with myself???? I guess I can start with entering all the stuff that is sitting on top of my desk. I think I will focus more time to entering all the paperwork that I fail to get done now. I know I will have more clients that I could meet during the day which will be nice because that will cut down on evening appointments. I can also do all my pick ups in peace. WOW, it will feel weird to not have my little dudes around all day but will be nice to get stuff done while they are at school.

Busy day today as I have to bring Jack (my nephew dog) to the vet. Then just going to chill......yup......I said chill for the rest of the day. We all know how crazy every single day has been for me for the beginning part of the year and this weekend I have taken it (once all arrangements went out) for just my family and myself. I am looking forward to just enjoying some time sitting my butt on the couch and watching some TV. Might even go for a nap this afternoon. Let's see how this day pans out...

A Horrible Day

Don't know why but today has been a horrible day. I woke up feeling moody and not well rested. I was going to start my day with a speed walk/run but was just so out of it that I didn't even feel like going. Then we decided to head out and do some things around town. First stop (5 minutes away from my house) we took the boys to get their haircuts. My really cute blinged out flip flops broke while walking back from a Starbucks treat. We had to come back home to change my shoes. Next stop was the water splash pad. The boys ran around while Steve and I sat there making sure the boys were not running and causing trouble. Sure enough I got up to talk to one of the pre-school's teachers (she was taking her little girl to the park) and I stepped in something. A sticky gummy bear a couple of kids let behind. Let me tell you I was not impressed. Just added to my day.

We then headed to the mall were I was able to purchase some Bath & Body Works items, a sports bra and some Chinese food for dinner. Arrived home ate, took a bath and uploaded the new software for my blackberry. Well of course it did not go right because now my calendar is all wrong. I have overlapping of events and it's just a mess. I am just thinking I better get myself to bed and ready for my 6:30 am wake up. Edna and I are starting our weekly speed walking/running twice a week. I am so looking forward to it as I am feeling like I need it to continue to work on my weight loss. Wish me luck tomorrow morning. I hope my day is a better one tomorrow.

Dr. Poon 59 Week Photo Update

Ok so not the best picture of me but I was cleaning out (yes, again) my closet. I took out 57 hangers and wanted to have some fun playing dress up with some of the clothes I will be keeping to keep me motivated. I purchased this dress for my sisters wedding and I had to get it altered and decided to also change it to something I would like and would wear again. I changed my mind as soon as I tried it on again. lol I think you will agree that it is a dress I should never wear again. I will keep it to keep reminding me of were I came from and where I will be heading and the full journey it has taken me to get there.

Dr. Poon 61 Week Update

Ok, I am caught up to date here until tonight's weigh in. For this weigh in I gained 2.5 pounds. This only means I really have to start finally thinking of working out at some point. I have been slowing down but also enjoying life and also the casual summer BBQ's and just plain enjoying my time with family and friends.

In total I have lost 73.5 pounds. Now let's see what happens tonight. :)

Dr. Poon 59 Week Update

As promised I am still missing 2 more updates before today's weigh in so here it goes. Week 59 was the week my cousins were here from Bermy. I did ok considering we were eating out and also I did have a few things I should have not. So my weigh in was down 1.5 pounds. I am happy with that.

This morning I was driving Tristan to camp and he looked over and said "Mom, you know that girl is driving and talking on her phone. Do you know that is not allowed?" I then said I know Tristan that is why I do not drive and talk. He turns and says I know but you do drink and drive. I was ready to die laughing but I just responded in saying Tristan do you know that they mean alcohol and not water. He says yeah I know but you still drink coffee while driving. OMG!!! He is so cute. I love how innocent he is and how he thinks he is right on everything. Oh to be 7 again. Thanks my dear son for the wonderful smile you put on my face this morning.

This picture was taken Canada Day (July 1). We all headed to Old Navy in the morning to purchase our tees. The boys looked so cute. They are really growing. Ethan is finally starting to understand that he needs to potty train before heading to school in September. It's great. Hopefully by this weekend it's a done deal. Woo Hoo!!!

Dr. Poon 57 Week Update

I have a lot to update so I will try and get it all done today since it is a rainy (or it's going to be) day. I'm at week 59 now so I must update until then.

I started this just one year ago. Some might think it is a long time and others like myself think of this as a short while. Time flies here so for me a year ago seams like just a few months. I lost another 2 pounds this time and it takes me to a total loss of 73.5 pounds.

How do I feel I get asked a lot.........in one word my answer is GREAT!!!!! I feel like when I started this journey I did not know where it would take me and am totally delighted where I am now. When you think you can't take it anymore just think of yourself struggling to get yourself up and out. To be healthy and not have to worry about dying tomorrow. Just to feel like to mean something to yourself. To get those old feels of saying yeah I look good. Trust me on this one you will feel and look great. So for all of you who have started today or are in for the long haul keep it going you're almost there. Don't count days or months just the time that you will get back to do the things you use to or have never gotten to do ever.

Hi Everyone,

I can not believe I have been off my blog for a month. June is the busiest month for wedding season so I haven't had much time for anything but designing. I am waiting for 12:30 am before I have to leave to go and pick up all my stands from today's wedding. I know it's crazy but I love every minute of it.

I wanted to come on here and say that I should have an update soon with Dr. Poon. Yes, I am still on and loving every minute of it. There are certainly more choices out there and it's getting so easy it doesn't even feel like I am on a diet anymore. I mean lifestyle change. lol I wanted to let all the fellow Pooners know that I have been receiving all your e-mails and have sent everyone out the plan who has requested. If you still have not received it please post and leave your e-mail and I will send it out to you. It could be that I missed a couple.

Gee, let's see. Tristan and Ethan finished school on Tuesday. Very sad day as I cried because we will be leaving St. David's and Ethan will no longer go to Kinderland. Well I shouldn't say ever because when I am really busy he will be going a couple of days here and there. Ethan is still not potty trained and Tristan lost his 6th tooth yesterday. Thank God for the male tooth fairy because the female tooth fairy was really tired and crashed out. He got another five bucks and is thrilled. He keeps saying he wants to buy a new video game but I have explained that five bucks now a days gets you nothing beside a loaf of bread. He seams to think I am being funny. I wish I was. lol

I have been going like crazy over here. This weekend has been a crazy one. When I am not designing I have been working (together with my darling husband) on the house. We have my cousins from Bermuda arriving on Wednesday and my cousin Jenny has requested to stay with us. I am so happy to have all of them come for the Baptism but more so to just hang out with us. The Baptism is only 1 week and 1 day away. I have almost everything ready besides what I will design for the table centrepieces. I know it will have some purple in it but still have yet to have a change to actually think about it. I should post up some pictures of my recent work.

On another note. This has been a very sad time in my circle of friends. My sweet friend lost her husband on Wednesday night. He died at age 54 of a massive heart attack. I have been very sad and my heart goes out to her and her 15 year old son. She is very dear to me and I know this is going to be a trying time for her. I am trying to be there as much as I could for her. I spent a few hours with her on Thursday night. The funeral is this Wednesday. Please pray for my girl friend and her son. They need all the prayers they can get.

Dr. Poon: My Ste. Anne's Special Sandwich

If there was one thing that I remember from my first trip to Ste. Anne's spa it was the sandwiches we had during our afternoon tea. They were served with crusty bread and I really wanted to have that again but make it fit within my day to day life within the Dr. Poon diet. So this is what I can up with.

Veronica's Ste. Anne's Special

Ingredients:

1 Slice Powerflax Bread (*purchased thou Ontario Store - inside Dr. Poon's Office)
Cucumber Slices
95% Kraft Fat-Free Cream Cheese
Alfalfa Sprouts

Directions:

Defrost bread. Spread a tbsp cream cheese onto bread.
Add alfalfa sprouts and sliced cucumbers.
ENJOY!

This truly is a treat. I love it and had it as one of my lunches. With a nice tall glass of cucumber water you too will think you've been to the spa. Okay so maybe you need to book yourself in to the spa. Just go ahead and do it.

It's hard to believe that 50 whole weeks have gone by. It's almost the 1 year mark for me. I had a really good past two weeks and lost 3 pounds. This brings me to a grand total of 71.5 pound gone. I never in a million years would have thought that at lost years Croptopia weekend that I would be returning this year 71.5 pounds lighter. I am so excited and know that everyone who usually goes will be shocked to see the new me.

This upcoming week I am going to try really hard at drinking more water because I have to lose 5 pounds so that I have that extra 2 pounds to play with while I am at Croptopia. I did explain to Dr. Poon that there is no way around getting other food while at the camp. I am not driving 1 hour each time I need to eat when food is always there ready for us. I'll just make better choices. I hope I get first dibs on the salad bar.

I know I have been really bad at keeping up with the blog but I am telling you my life is always fast paced and always running. Sometimes I even surprise myself with the amount of things I get done in one day. This morning I have been working on submitting all the orders and thought I might want to let everyone know (since I am two posts behind) on what's going on with my diet. This is going back but for this week I gained 2.5 pounds. This was also the week I allowed myself to enjoy and celebrate (my girlfriends birthday @ Ste. Anne's Spa) and enjoy the great meal. So right now I am back to 68.5. But like I always say pull up your socks and get back to it.

Dr. Poon: My Italian Wedding Soup

Italian Wedding Soup

Ingredients:

Water
Low Sodium Chicken Broth
Ground Turkey
1 Clove Garlic
2 Stalks Spring (Green) Onion
Presidents Choice Sun Dried Tomato & Herb Seasoning
1 Bag Tofu Shirataki Fettuccine Noodles
Black Pepper
1 Bunch Asparagus
1 Bag Bok Choy

Directions:

Add 8 Glasses of water and 3 Glasses Low Sodium Chicken broth to a soup pot. Turn on heat to medium.
In a bowl add ground turkey or chicken. Add in mined garlic and 2 tbsp sun dried tomato & herb seasoning. Mix together and shape into balls. At this point your water should be boiling. As you finish eat small shaped meat ball drop it into the pot.
Chop your asparagus, green onion and bok choy and add it into the pot.
In a separate pot please first rinse the noodles and then boil them for 5 - 10 minutes to remove odor. When ready drain and add to soup pot.
Add this point add your black pepper to taste.

On one of those days were you know it will be a long one make this humble soup. It certainly does taste like the real thing. With this one you will not be needing anything on the side except a nice coffee or tea afterwards.

Crazy Busy Week

Here's another busy week in my life. I can't believe sometimes how much running around I actually do. I've met with tons of clients and booked many events. It's funny as I am still recovering from last weekend and can't wait to get my hands back into water and arrange my beautiful flowers.

The weather has been stunning here in T.O. I'll take it since everyone seams much more pleasant with the sun shining.

On Sunday evening I drove out to Milton to meet up with Melissa (from Bermuda). I believe I've written about her before. She is the girl I met when I went down to say my final goodbye to my dear aunt Val. I read on facebook she arrived here in Canada and I just had to take her out to dinner. I really enjoyed sitting with her and just talking. We even had the chance to talk about her being there just minutes after my aunts passing.

I can't believe it but only 6 days from now we (Edna, Rose and myself) will be at Ste. Anne's spa enjoying a wonderful day at the spa. I can not wait. I've been working so hard that I think I really need to just stop and relax at least for a day.

Speaking of Edna's birthday. Oh the things I did to my poor friend. I made sure that the whole street knew it was her 40th not to mention everyone who drove by her that morning. Yes, I put a huge cougar sign announcing to the street that it was her 40th. (If you're looking for awesome service and great signs contact my friend Judy (416)709-1130 from Announcements by the Yard www.announcementsbytheyard.ca ) Then if you think that was bad I make sure her husband left her car unlocked and Steve and I filled her car with 40 Happy Birthday balloons and streamers. Let's just say she was not impressed in the morning when she was trying to leave for work but instead was cleaning out her car. I was dying of laughter and was also holding my breath because I thought she would notice the sign I placed at the back of her car saying HONK!!!! I's my 40th birthday. She got honked at all the way into work. OMG!!!! When she was telling me what happened, I was almost rolling of laughter. I feel bad that I really had to remind her but I think it only made it more special for her. She is a wonderful friend and I can't imagine not making a big deal of her special day.

I better get myself to bed tonight at a reasonable hour.

Dr. Poon 46 Week Update

It's been 46 weeks and I am still going. I hope all of you who write, e-mail and leave comments are also on a roll. If not pull your socks up and get back to it. You'll thank me later. Ok I'll admit I was good but not extremely good because of Easter. I did enjoy half a Portuguese cupcake and some chocolate during Easter lunch at my mother in-laws. I thought I was going to go in there and be disappointed but no I lost another 2 pounds and 1 pound of fat. Both Dr. Terry Poon and I are happy with my progress and I am at a total of 71 pounds gone.

I can not begin to tell you how great this feeling is. I am starting to notice huge changes in my body. I certainly need to go out and buy more new items to keep me going. I put on a pair of pants that I purchased maybe 4 months ago and they are way too big. I feel them falling off. What an awesome feeling is that. My legs are not rubbing together to the point where it hurts. I can walk and not even touch the next leg. If you have this problem you know exactly what I am talking about.

I know most of you follow me and my story and know that I have my own set goal of meeting my husband's same exact weight. I am only 12 pounds away. I can totally do this and when I do he needs to pick me up and throw me over his shoulder like he use to. I'll tell him all about it when I finally get there. I don't want him worrying about having to pick me up until we finally get there. Right now I am most likely smaller than what I got married at. I really do not remember what my weight was at that time. I have been feeling the need to take out my (cleaned and preserved) wedding dress and put it on. I am scared that I will ruin it, I know who the heck is going to wear it. No one I can assure you on that one. I still to this day love it but can remember having a hard time as a plus sized bride having to find the perfect dress. It wasn't that they did not offer them it was more the fact that the shop attendants were a little (a lot) hard on me for being plus sized. I even got one that asked my (tiny) sister to try on the samples instead of me the bride. My sister ended up telling me to put on my clothes and we walked out. I am thankful for having people behind me every step of the way. I have many people in my life that support me at any size. You will also know who are your true supporters.

I better get going as it's Ethan's day off of daycare and he is causing as much trouble as he possibly can while I am typing. Oh well, nothing a little vim won't clean. lol

Dr. Poon: My Portuguese Tuna Boil

Portuguese Tuna Boil

Ingredients:

2 Stalks Green (Spring) Onion
1 Head Cauliflower
1 Bag (12-15 pieces) Baby Bok Choy
1 Head Broccoli
1 - 2 Can(s) Low Sodium Tuna *depends how many your serving*
1 - 2 Boiled Eggs *depends how many your serving*
Olive Oil
Vinegar

Directions:

Add cauliflower to boiling water and cook until very tender and can be broken with a folk or mashed with a spatula.
Remove from heat and mash. Add the cauliflower to the bottom of your dish.
Add broccoli and bok choy to the same water and cook until tender and remove. Place on top of cauliflower mash.
Open your can of tuna or 2 cans if serving more people and add to the center of your dish.
Boil desired amount of eggs and slice when cooled. Arrange on top of your tuna.
Slice your green onions and place on dish.

* Serve your guests (yourself) and then add the olive oil and vinegar on top. Yum-O!!!!!!!!!

This dish was inspired by my mother's Portuguese cod boil. I use to love having it on Friday nights so I thought why not recreate it and hit it with a twist. I will not talk about what was in my mother's recipe because we can not have half of those items so I incorporated new items and it tastes just a great if not better. The great thing is that it certainly is better for you.

A Special Call from Bermuda

On this very rainy day in Ontario about 10 minutes ago I felt the sun shine from Bermuda with one little phone call. It shocked me to say the least. I received a call from my cousin Michael (Mikey) he is by far one of my closets cousin even though we are miles away from one another. Every time we see or speak to each other it feels like we have never missed a beat. We are the same in so many ways and in others so opposite. Ever since my dear aunt (his mother) passed in December Michael has taken it very hard. He has been trying to get his life back on track and I honestly think that this is a huge step for him to call me out of the blue all on his own. I know he is an adult but to make this move make my heart so happy I can not explain to you how I am feeling right now. I thought I was going to cry but held out until after our call.

These days receiving a call from my family makes me happy but also makes me sad to think that they are so far and we are unable to just make plans for the weekend. None the less I enjoyed our conversation and am happy that things are looking up and he is finally able to see the light. Sometimes we just need to know that there are loved ones out there thinking of us.

If there is someone in your life you haven't spoke to in a while or know that they are going thou a hard time pick up that phone and make a call or just call a friend to say hello.

Dr. Poon: My Chicken Pesto

My Chicken Pesto

Ingredients:

1 Large tbsp 95% fat free cream cheese
1 tsp pesto (made fresh) please see below for recipe
1 BBQ'd chicken breast
Mashed cauliflower
black pepper
low sodium chicken broth
1 tsp fresh chopped parsley

Directions:

Place cauliflower in pan and cook until tender. Take out and mash with a masher just like you would potatoes until smooth.
Cut your (pre-cooked) chicken breast and place aside.
In a sauce pan add the fat free cream cheese, pesto and some chicken broth and combine with a whisk. Using a whisk will allow your sauce to come together. Cook for about 3-5 minutes and add your chicken until coated. At this point add your black pepper to taste.
Place your mashed cauliflower on a plate and add your chicken and sauce over the mash.
Garnish with parsley.

This dish is nice and light. On those days where you think your missing out on something mashed this is the perfect dish for you. I enjoyed eating it and can not wait to make it again.

Dr. Poon 44 Week Update

Went in this morning for my bi-weekly appointment with Dr. Terry Poon and sure enough I lost another 3 pounds for a total of 69 pounds gone. Plus I've also lost 4 pounds of fat. I am only 14 pounds away from my own personal goal of being the same weight as my hubby. I know it's a crazy thing but certainly makes me excited non the less.

It's 8 or 10 weeks away from my 1 year anniversary with Dr. Poon and I am starting to think just like I knew I would that I will not make my Doctors 100 pounds gone goal. I know I will try my very best but that is like 3.5 pounds a week. I am totally happy with the speed of my weight loss and also delighted with the new me.

I started taking pictures of myself at the start of my weight loss and at 20 weeks. I will find that PJ set and take another updated picture in the next couple of days. I want everyone out there to see that this can happen to you also. On those days where you think it's not worth it just look at those pictures and you will see it totally is.

Sunday Morning

It's Sunday morning and we've already been up for 4 hours with the boys. These boys get up so early every single morning. I just wish once that I would wake up at noon on a Sunday. Ok noon might be a bit much but some time after 9 am would be great.

We are trying again to potty train Mr. Ethan and again this is not going well. I can so see him going into JK in September still wearing his diaper. One of my worst nightmares.

Today is my mommies 61st birthday. We are heading over to my sister's house for some Chinese food and ice cream cake. Lord help me because these are all the things I can not have but have to sit there while everyone eats the yummiest Chinese food around while I smile and say I really do not want some. This is the second birthday in a week. My mother in-laws birthday was Monday but we celebrated on Sunday.

Yesterday I did a sweet 16th birthday party. I am tired but am happy with all the beautiful things I created for Cassandra. She is a sweet kid. I'll share some pictures later when I upload them all.

Off I go wish me luck that I will stay strong and only have a little bit of this and a little bite of that.

Dr. Poon 42 Week Update

Tuesday went in for my appointment and was a bit disappointed. Yup, another week of just losing 1 pound. I am down 66 pounds since I started but I really have been good except for a small scoop of ice cream that I had when the boys, Steve and I decided to have a little treat. I did have it because the boys are asking why I can't have this and that. I explain to them so now Tristan announces to the world that his mom is on a diet called Dr. Poon's and she can only get green things. It's so funny to hear it from him. Ehan has started asking about Dr. Poon's items. He seams to think he can eat them also. Poor little man can barley hold up his own pants. lol

Dr. Terry Poon was wonderful. He explained that my body has done this before. He looked at my food journal and told me that I am doing a good job and to keep at it. I am telling you this guy is awesome. I look forward to our bi-weekly visits. I think I will miss it one day ( I did say one day) when I only have to see him once a month or even once a year.

I have been drinking a lot more water and trying to stay away from the tea. I know I really should enjoy a tea every so often but I have decided that I really need to be strict in order to met my 100 pound goal. There are only 34 pounds to go and I really want to see that happen. I will be so thrilled and can say that I will certainly purchase a coffee for the car behind me at Starbucks in the morning. It's always nice to see the person smiling as your driving off. Try it sometime. It will even put a smile on your face too because you did something for someone and know you are getting nothing in return.

Let's keep our fingers crossed that I will have the energy to get me there in the next 2.5 months.

Hope you are all doing well as for myself it's been insane over here. The floral season has started in full force. I have been replying to e-mails the last 3 hours. I sent out all the e-mail requesting the meal plan. If you haven't received it yet please remember to leave me your e-mail address' or else I can not send it out to you.

Let's see March break was last week and Steve took the week off to spend with me and the kids. He really is a wonderful man. We really needed to get the car thing sorted out and first thing Sunday we went out to the Maple auto area at Jane and Rutherford only to find out that the whole auto mall is closed on Sundays. Well, needless to say we tried again with boys in tow on Monday. Let's say I am surprised Toyota did not give us a free car just to get Ethan out of there. He screamed for almost 2 hours straight. Believe me I had enough and just wanted to go home. Tuesday was a lot better. Why you ask because Ethan was at daycare. We sent out and headed to Thornhill this time. I test drove a few cars and SUV's and nothing really jumped out at me. I think when I actually have to spend a large amount on something I really do not get into it like I use to (before having children) back in the day. We walked into KIA and Steve was asking me if I saw anything I liked. He was looking more at the Sportage (I think that is what it is called) I pointed to one in the next room and asked what is that......he proceeded to walk over and said that is a Rondo. We both walked up and knew that this was the SUV that we were going to purchase. Off for another test drive and 2 hours later we now own a KIA Rondo since Thursday. It all happens so fast but we are really loving the extra room. I have even gone to my suppliers and loaded it up twice in the last few days. The boys think it's awesome because they have so much room.

For this March break we really did not do too much because of all the running around we had to get done but it was a really nice one. The weather was awesome. Ethan still does not want to potty train. Tristan lost another tooth. Steve was really looking forward to going back to work and I was just happy to get back to my routine.

I have a customer album I need to get finished, April cards for Elite Swappers, orders to place, orders to pick up and flowers to create. That's not counting everything else I have to do. Oh well, I better get off this thing and post up my week 42 results for Dr. Poon.

It's been a while

since coming on here and just blogging. I have been super busy with updating the first floor. I re-did the living room (new couches, paint...etc.) and also re-upholstered the kitchen chairs. I have been also keeping my poor hubby busy with changing the fixtures in the basement. I now have light down there so I can work on my scrapbooking. Speaking of scrapbooking I am getting super excited because there are only 79 days until Croptopia. We all know how much I enjoy teaching but most importantly spending time with my girls and seeing everyone else. This year with all the weddings I am only teaching one class. I am waiting for some product to arrive and then I will be doing all the designing. I know it sounds like 79 days is a long time but when you think about it they just pass you by before you know it, it's here.

I have booked Tristan's birthday party. Even gone as far as writing out all the invites. They are ready to go out in about 1 months time. He has decided on a Pokemon theme this year. Man does this man know exactly what he wants.

Ethan did another number 2 in the toilet today with his father. I have missed it the second time. I am just excited that there might be a chance that he will be potty trained. One can only hope.

The weather has been wonderful lately. Today was a high of 20 degrees. I was just happy to see the sunshine we have been getting and also being able to go out without a coat has been great. Let's see how long this will last for. Keeping my fingers crossed.

As for Dr. Poon I am still on it. My next appointment is next Tuesday.I am interested to see where I am at. Keeping everything crossed there.

Off I go as I just purchased some new nail polish I want to try out. I have not gone for a manicure yet since the sun has been shining only because there is never a moment to do so. Let's see if my nails look as good when I wake up as when I went to bed with them still wet.... :)

Valentine's Day Movie Review

Steve and I watched this one last night. I was honestly looking forward to this one for a while as there is an awesome cast which includes Ashton Kutcher, Jessica Alba, Bradley Cooper, Anne Hathaway, Jessica Biel, Julia Roberts and of course the one and only Queen Latifah. It was just alright. Not your typical sappy love romance but in the end it all comes together. I loved Queen Latifah's role. She always does well in her roles. As for Ashton I really enjoyed him playing a florist shop owner. :)

Dr. Poon 40 Week Update

Hi Fellow Pooners,

Hope you are all doing well. As for myself I think all the action in my life right now has caught up to me. I have been taking care of a couple of sickies here, my oldest son being the sickest one. I feel so bad for him right now. I wish it could be me instead of him. It might just help me in my next weigh in. lol

I went into the office yesterday having great hopes for myself.........got on that scale and sure enough only 1 pound gone. What????????????????????????? Only one little pound. I thought I was at least 4 pounds down. Well, like I say you have to take the good and the bad and move along with your quest. So I am pulling up my socks and going to write out my food journal and pray that I am ahead of myself next appointment. I did however lose 2 pounds of fat. So in total I am down 65 pounds. Which is 65 pounds I never thought I would lose so it's great for me.

Off I go to try and post up some pictures and other stuff that's happening in my life right now.

Crazy Week

It's been a crazy week so far. I know it's only Monday but since last Monday a lot has happened in this house. I managed to go shopping for new couches on Friday. Wednesday they arrived and I still hadn't had the chance to get the old ones out. So hubby and I decided to put them in the garage and offer them up for free to a good home. Thursday purchased a 3 piece ottoman. Saturday we painted the whole living room.

Wow, all this work for one room that is looking totally awesome. I can't wait to upload pictures of the new area. It's updated from the couches that we purchased 8 years ago. Sometimes I look back and think what was I thinking when I picked those couches out but to my defence they were super comfy and looked good in our room until the kids came around.

I will take pictures and post them up sometime this week. It's going to be a crazy one as I had flowers to do today, flowers for Thursday, 40 gourmet baskets for the buildings, prepare for the all day crop on Saturday. I guess I will be super busy but I will make sure to come back and share the pictures with you all.

Dr. Poon: My Muffins

After so many e-mails and people asking me to bake something Dr. Poonish I have finally come up with it.

Muffins

Ingredients:

2 cups low fat soya flour

1/2 cup organic flax seed

1 tsp baking soda

19 packets Splenda

2 tbsp powered peanut butter

1/2 cup 5% cream

1-1/2 cups water

1/4 cup chocolate chips

1 whole egg

2 egg whites

1 tbsp vanilla

Directions:

1. Pre-heat oven to 350 degrees. Line a muffin tin with 12 large liners.

2. Add all dry ingredients to a large mixing bowl. Mix until all combined.

3. Make a small well in the centre of the dry ingredients. Add the egg and egg whites and mix. This is a sticky mixture so you might find it a little hard. Try using a stand mixer.

4. Add the cream and water in 1/2 cups and keep mixing until blended.

5. Add the vanilla and chocolate and stir until well blended. It's going to look hard and will be sticky.

6. Add batter to muffin liners and with a wet spoon smooth down so that it is looking flat on top like a cupcake.

7. Bake for 25 - 30 minutes.

These actually taste good. You can find the low fat soya flour and organic flax seeds at the health food store. The powdered peanut butter is the one purchased at the Dr. Poon (Ontario Nutrition) store.

Add some of the Dr. Poon caramel spread and it makes an awesome breakfast.

I am so happy that I was finally able to get at least one baked recipes besides my clouds.

Painting

On Family Day we had a young artist come and show me some of his beautiful work. I of course could never see something I love and not buy it. Yup, call me a sucker but I am all over helping a student who needs to get his name out there. I purchased (our I should say my darling husband purchased) this painting. I still need to get it framed but this baby will go in my dining area.

The artist's name is Joseph. I wish him well in his upcoming gallery.

Dr. Poon 38 Week Update

Here I am again to report that I went in to see my Dr. (Terry) Poon yesterday and am happy to report I am another 3 pounds lighter. Yes, this is a total of 64 pounds gone. I am starting to get really excited because Dr. Poon wants me to have lost 100 pounds by the one year mark and I have 36 more pounds to go. So I have 15 weeks left to go before I hit the one year mark. That would mean I would need to lose about 2.4 pounds per week. Honestly I do not think I could do it as I have been averaging about 1 - 1.5 per week but everyone knows that I will give it my best try. A year ago if you told me that I would even be 50 pounds lighter I would have laughed in your face and here I am at 64 gone and feel great.

Here's the funny thing after losing the 100 pounds (if I actually do get there) Dr. Poon wants me to lose another 78. I think this is not for me as my goal would be to loose another 48 - 50 pounds on top of the 100.

Goals: Let's see the next personal goal for myself would be to lose another 19 pounds in the next month and a half. This will take me to the exact weight of my husband. We will be even at that point. Poor guy thinks I am nuts with all this about having to be the exact same weight as him but hey a girl can try. :)

My husband is my biggest supporter. I think it's great that I have him by my side with everything that I do. He is even eating my prepared meals. Doesn't complain and really does keep me motivated. Thank you honey for all your support. It means the world to me.

Brody's Baptism Day

Yes, it was our nephew Brody's Baptism. Steve was a Godfather for the very first time ever. He was so proud and I was delighted to see him with Brody.

Brody is a sweetie and has the most beautiful smile. This little man is always smiling at everyone and anyone. It's so cute to see. I wanted to share some pictures of his special day with you all.

Dear John Movie Review

Rose and I decided to head out for dinner and a movie. We decided to go and watch Dear John. I read the book and Rose has not. I am a huge Nicholas Sparks fan and knew that I would love it but was a little worried about Rose.

We arrived to the early show and were impressed with the AMC at Hwy 7 and Jane area. The seats were super comfortable and there was a lot of leg room. It was Rose's suggestion to go there and she was right.

As for the movie I could not ask for a better movie. I laughed, I cried and left with the feeling that I could have sat there for hours watching Tatum Channing. He was cute and charming. I also loved Amanda Seyfried in her role.

This is one to take your girlfriend to and not your hubby as it was very sappy.

Headed to Baton Rouge for dinner. Had my favorite salad ever; I was happy.

Thanks Rose for an awesome movie and dinner. I really needed to get out and loved spending it with you.

It's Friday

Can't believe another week has come and gone. We've already finished the first week of February. It's been a while since I have gone out for a movie and dinner so Rose and I are heading out to watch Dear John (early show) and then heading out to dinner. I am so looking forward to spending some time with her and also just getting out of the house for a little bit.

Mr. Ethan is sleeping. Yup, I said he is sleeping which is a huge surprise. He never sleeps with me bu I told him he needed to nap and placed him in my bed right beside me and off he went to la la land. I was able to catch up on customer e-mails and of course my farm on farmville. I think you can say I am addicted. lol

I have been receiving some wonderful e-mail from all of you out there who are following me and my journey. Keep those comments and e-mails coming I reply to everyone. I honestly do and no I do not think your weird. lol I love reading all your stories and am so proud of each and every one of you. We can all do this together.

I should have washed and dried my hair but there is never enough time in my day to do everything I need to get done.

Dr. Poon: 36 Week Update

It has been 36 weeks and I am still on a roll. I lost another 3.5 pounds of which 3 pounds were just fat alone. In total I have lost 61 pounds.

If you are asking me if I can believe it? The answer is no it's still so surreal for me. I only notice when I put older clothes on to see where I'm at and also in pictures of myself. This just feels great.

My goal for the next two weeks is to lose 4-5 pounds. I want to hit the 65 pounds off goal which is my next one.

It's a blah day

Today will be February. Wow! Time is flying by. This month we have some exciting things happening we have Brody's Baptism next Sunday, my God-daugther (Tiffany's) birthday, Noah and Jaden's birthdays, my brother Moses' birthday, my girlfriend Amy's birthday and the Diva all day crop. This is just some of the major things we have going on this month. Then there is a PA day tomorrow for Tristan and of course family day on the 15th. I am still trying to figure out what we will do for it but it should be something fun.

It's been a busy weekend so far. Friday Steve had his flex day so once we picked up Tristan from school we all headed out to the bowling ally for a game. We really had fun watching both boys throw the ball and get the pins down. Ethan even came up with a little dance. How cute. These are the times that we should enjoy because when they are older Steve and I will be on our own as they go out bowling with their girls. After bowling the boys got to pick the dinner spot and they picked Jack Astor's. I had the most wonderful salad and believe me when I say I am still thinking about it. It was the Chicken Chophouse Salad - grilled fresh chicken breast, served on a bed of greens, red peppers, cilantro, toasted sesame seeds and cucumbers, drizzled with zesty sesame-soy dressing. Topped with crispy wonton strips, spicy pecans and sun dried-cranberries. I am telling you it was awesome.

On Saturday I was not feeling too well so I layed down for a couple of hours then headed to Georgetown for Steve's cousin's little boy's first birthday. It was nice seeing everyone we haven't in a few years. Justin is the cutest little man.

Today we have my parents coming over for a visit with their grandsons and I am just cleaning out my drawers and some business stuff. Outside it is snowing and I really do not feel like going out.

Cleaning out the closet... (Picture Included)

I am sure we've all had the days were we think is all this working or even worth it. Well, I am here to tell you it does and it is. I decided that since losing now 57.5 pounds (Dr. Poon 34 weeks)that my clothes are just getting bigger and bigger and I am trying everything to hold onto them for what reason. I have no idea but Monday was the day that I spent almost all afternoon in my closet cleaning out all the clothes that no longer fits. I did leave some in there just in case I need to put them back on to see where I'm at because that's how you remember were you started. I cleaned out 50 hangers of almost new clothes (gave them to my sweet friend), 4 bags of clothes that were in good shape but were a little older to the charity boxes and thru out 2 bags of just bras. I am sitting here thinking hmmmmm should I post this picture of myself half naked on my blog for the world to see...........the answer is yes because you can do it too. I still have a long way to go but these are the stops in the middle that we need to reward ourselves.

I put on items from my closet and I thrilled they no longer fit. I go into stores that I was never able to shop at like Old Navy and just buy their now regular sizes. It feels great!

I look at this picture and see I still have to go on with this but also see that there has been a road that I have travelled to get here.

Potty News

I think the day has finally come where my little Ethan is ready to use the potty. I've been talking to him about using the potty now that he needs to give up his diapers to his little cousins Brody and Chloe. Finally after trying 5 times to potty train he is getting it. This morning he came into our room at about 6:30 am and asked to go pee and I took him. I also removed the pull up and he went running to his room. He opened the drawer that contains all those cute itty bitty underpants and put his Thomas ones on. I thought ok let's go with the flow today. I asked him to go back to bed. I knew in my heart that this could end up in a huge mess but hey what's life without some drama early in the morning. He slept for another hour and woke up dry. Today the whole day he tried his best and only had one accident.

I can not tell you how happy I am that he decided to do it because now I know he is ready. We always try to push them because their older siblings did it before they did and I am so happy that our pediatrician always encourages us to listen to our children and only do things when they are ready. Let's see what tomorrow brings. I have explained that after we drop off Tristan at school that he will be able to change to his underwear.

Dr. Poon 34 Week Update

Delighted to say I lost 2 pounds this last couple of weeks. That is a total of 57 pounds gone. With all the appointments I've had I am surprised that I have stuck to it. I really want to badly get past this hurdle but I guess with sticking to it to a T it will help. I am starting a food journal tomorrow and will show it to Dr. Poon. He also mentioned that I needed to make sure to eat, if you do not eat enough you also will not lose.

Thursday morning I am heading to boot camp for an hour. I must make sure to get this body working. I am so looking forward to taking an hour out for myself.

My sister had baby Chloe today at 10:40 am delivered by c-section. Mommy and baby are doing well. Chloe Jayne weighted in at 8 pounds 5 ounces. I do not have a length for her as of yet but just got back from seeing her about 2 hours ago. She is so beautiful. Steve, myself and the boys are head over heels in love with her. This little lady I can already see has Padrinho (my husband her godfather) wrapped around her little finger.

I will share pictures of her as soon as my sister says it's ok to share. She would like the family to at least see her before any pictures are posted.

I can not wait to see her again. I think a trip tomorrow is in order.

Dr. Poon: My Spaghetti and Meatballs

Ingredients:

Extra Lean Ground Beef
1/2 Stalk Celery (Chopped)
2 Cloves Garlic (chopped)
1 tbsp Olive Oil
1 Clove Garlic (Grated)
Black Pepper
1 Egg
Crushed Chilies
1 Stalk Green (Spring) Onion
8 oz bag House Foods Tofu Shirataki Spaghetti Noddles

Directions:

Mix ground beef, celery, garlic and 1 egg together and form into balls. Cook in a non-stick pan until cooked thou.
At this time wash noodles with cold water and boil for 5 minutes.
Once meatballs are cooked remove them from pan and set aside. Leaving the pan dirty with drippings.
Add grated garlic and black pepper with 1 tbsp olive oil and let garlic cook a little.
Once garlic is ready add noodles to pan and let cook. It will start taking up all the pan flavours. Add the crushed chili peppers and meatballs back and let cook for about 4 minutes.
Garnish with the chopped green onion.

There is major flavour in this dish. I love that everything just tastes a little kicked up a notce because of the chillies.

Dr. Poon: My Beef Stew

Ingredients:

Beef (cubed)
1 cup Low Sodium Beef Broth
2 cups Water
Xantan Gum *purchased from Dr. Poon store
5 Stalks Celery (chopped)
3 Green Peppers (sliced)
3 Stalks Green (spring) Onion
1 tbsp La Grille Chicken Seasoning (No Salt Added)
1 tbsp PC Roasted Garlic Seasoning
1 tbsp PC Sun-Dried Tomato & Herb Seasoning
Black Pepper to taste

Directions:

Add all ingredients except the Xantan Gum to a crock pot in the morning. Turn on high if you are going to be home for the next 5 hours if not then turn onto low and leave.
If staying home stir at about 3 hours in and continue cooking. If leaving for work do nothing because it is on low and will be great when you return home.
Once the time as come 5 hours on high or 8 hours on low remove the items except the liquid from the pot. This should leave you with some pieces in the bottom along with a little liquid that is nicely seasoned and flavoured.
With a whisk, whisk in the Xantan Gum in very small amounts until it becomes think like gravy. Once that is done add your pepper to taste and plate. Enjoy your meal!

*All items are purchased at a regular grocery store except for the Xantan Gum which is purchased at Dr. Poon store or the low-carb grocery store.

Dr. Poon: My Thai Spicy Chicken and Greens

Thai Spicy Chicken and Greens

Ingredients:

Boneless, Skinless Chicken Breast Cubed
2 Cloves Garlic (chopped)
5 Stalks Celery (chopped about 2" in length)
2 Green Bell Peppers (sliced)
2 tbsp Thai Sweet & Spicy Sauce *low sodium
1 tsp Crushed Chillies
2 tsp Olive Oil
4 tbsp Water
1 tsp Club House No Salted Added Chicken Seasoning
2 tbsp Kikkoman Less Sodium Soy Sauce

Directions:

Add 1 tsp olive oil to a a pan with 1 clove chopped garlic, celery and bell peppers. Cook until desired tenderness. I like mine crispy.
Once the veggies are cooked remove to a dish.
Add last 1 tsp olive oil to same pan along with the last clove of chopped garlic. Add chicken and cook until chicken is no longer pink. This should take about 10 - 15 minutes stirring the chicken occasionally.
Add the veggies back into the pan and add all other ingredients including water. Let cook together for about 5 - 7 minutes and it will be ready.

This one is a a little spicy but tastes so good. A nice light meal with just enough meat and veggies for all to eat.

Dr. Poon: My Garlic Beef w/Mushrooms, Thai Yam Noodles & Asparagus

Garlic Beef with Mushrooms, Thai Yam Noodles and Asparagus

*Please note the noodles are hiding under the beef. The second pictures shows them a little better.

Ingredients:

4 Pieces Tender Beef (No Fat)
3 Large Cloves of Garlic (chopped)

1 Package Yam Noodles (white)

4 Tablespoons Olive Oil

1 Tablespoon Low Sodium Soy Sauce

1 Teaspoon Thai Sauce

1 Container Cremini Mushrooms (small sized)

1/4 cup Beef Broth

1 Tablespoon President's Choice Roasted Garlic Seasoning (No Salt Added)

1 Bunch Fresh Asparagus

Black Pepper to taste

Directions:

In a pan add 2 tbsp olive oil, 2 cloves of chopped fresh garlic and cook for about 2 minutes. Once hot add your beef (season with black pepper) and cook on both sides until fully cooked.
At this time take another pot and cook your asparagus until fork tender. This will take about 5-8 minutes. Once cooked drain and toss with a little olive oil and black pepper. Set aside.

In the same pot you've used for your asparagus add fresh water and bring to a boil. Once ready drain your yam noodles (watch out they smell really bad - almost fishy but no need to worry as once cooked you can not taste or smell it) with fresh water and add to the boiling water. Boil for 6 minutes and drain water leaving noodles in pot.

Add 1 tbsp low sodium soy sauce and 1 tsp Thai sauce and toss noodles with the two ingredients. Leave on a very low heat while continuing to let some of the moisture from the soy sauce cook out.

Once your meat has cooked remove just the meat and place on a serving dish. Add your 2 tbsp olive oil, 1 clove chopped garlic and all the mushrooms. Toss them with the olive oil and add 1 tbsp PC roasted garlic seasoning and 1/4 cup beef broth and black pepper. Cook for about 10 - 12 minutes until done.

Once your mushrooms are finished add them to the noodle pot and stir. The meal is ready to be served.

If there is one recipe that you try from this blog I would have to say it's a toss up between the Portuguese Shrimps and this yummy dish. My hubby (he's not on Dr. Poon) gobbled all of it and went for seconds. I am totally full and am thinking about when I will be able to make it again.

This wedding was a great customers daughters and I could not be happier that she choose me again to do this daughter's event. The bride Kerri did not want your typical foo foo wedding so I told her to leave it in my hands and I created a fall wedding that she loved.

After another long day of designing I can say that I loved the colour combo, flower mix and everything that I used to make this wedding something that Kerri and Mike fell head over heels in love. I am happy that the couple along with their mother let me create something from my heart.

Dr. Poon 32 Week Update

I have no idea why I thought it was going to be a really bad appointment. I thought I had gained something like 5 pounds and sure enough I only gained 2. So I am back at a total loss of 55.5 pounds but the good news is that I also lost .5 pounds of fat. This appointment made me happy because I thought it was so much more of a weight gain. I have been better than I thought.

Today I have been on a mission to loss the 2 pounds plus I want another 5 pound weight loss. I want to see my next goal met next week so I better be getting it all together.

I wanted to thank you all for the wonderful comments you have been leaving and also all the great e-mails. This truly keeps me going to see that you all are inspired by me and the whole truth of it is that you all inspire me.

I have another awesome recipe to post up sometime tonight or tomorrow but I am still at a loss for what to name it. It was just awesome tasting and believe you me if I am banging out recipes like this one I will live on Dr. Poon's Phase 1 for life. lol

Dr. Poon: My Pollack Fillets with Green Beans

Pollack Fillets with Green Beans

Ingredients:

3 - 4 Skinless Pollack Fillets
1 Teaspoon Garlic (Finely minced)
1/2 Lemon (Juiced)
1 pinch of Lemon Rind
Steamed Green Beans
1 Tablespoon PC Sun Dried Tomato & Herb Seasoning Blend (No Salt Added)
2 Tablespoons Olive Oil

Directions:

In a pan add 1 tablespoon olive oil and garlic.
Juice 1/2 a lemon and the rind of one lemon and add to the pan.
Add your seasoning blend and then add your fish. Cook for 5 - 7 minutes on each side.
Once you have finished cooking the fish place it on your serving platter and then add your drained green beans to the same pan. Add your last tablespoon of olive oil and a couple of dashes of the seasoning blend. Let it cook for about 2 - 3 minutes to fully coat the beans.

This one is so yummy. I think I will have to make it tomorrow for myself.

Dr. Poon: My Cabbage Rolls

Cabbage Rolls (Pahse 1)

Ingredients:

1/2 Head Cabbage
1/2 pound Lean Ground Beef
1 Stalk Celery
2 Cloves finely chopped Garlic
2 Stalks Green (Spring) Onion
8 Cubes of Frozen Spinach or 1 cup fresh (cooked)
1 cup Beef Broth (low-sodium)
1 cup stewed tomatoes (low-sodium)
1/2 tbsp floor or thickening powder
2 tbsp Olive Oil
Black Pepper

Directions:

Add 2 tbsp Olive Oil to a pan. Chop celery, garlic and green onion add to pan. Cook slightly for about 3 minutes then add your ground beef. Add Black Pepper to taste.
At this time you want to add water to an other pot with the cabbage. Cook until it is fork tender. Drain and let stand at room temperature.
Once meat is cooked add frozen spinach and make sure it cooks into the soft stage before moving to the next step.
Once everything is cooked add 1/2 of the broth to the pot and the thickening powder. Once it is incorporated add the rest of the broth. If it looks too thick add some water but very little so that it is not too saucy. We do not want anything dripping out of the rolls.
Once everything has cooked please allow it to cool down.
Once cooled now you can assemble the rolls. Peel cabbage leafs off the cabbage head slowly and overlay them together to give you a stronger hold. Add a couple of tablespoons in the center and roll. Place these in a baking dish.
Once all of them have been rolled add the stewed tomato to the top of the rolls. Make sure to use more of the watered down tomato juice at the bottom then the actual tomatoes. Once this is done you can place it all in the oven at 350 degrees. Cook for about 15 to 20 minutes and it is ready. This will make about 8 - 10 rolls.

I wanted something that tasted as good as the ones I use to make and to tell you the truth they taste better.

I thought about it and have decided on my word for 2010. My word is CELEBRATE.

Definition: To honour by solemn rites; by ceremonies of joy and respect, or by refraining from ordinary business; to observe duly; to keep; as, to celebrate a birthday...etc.

With last year ending and the beginning of a fresh start I wanted a word that would be meaningful enough to carry thou the year. I know we always celebrate birthdays but this word will mean more then just celebrating a birthday or special event. It will mean to celebrate everything in life, be it big or little.

I will make sure to celebrate every time I make it to the next level of were I want to be. I will celebrate my children being healthy and happy on a daily basis. I will celebrate family and friends for just being them and also for what they bring to my life. I will celebrate everything.

Elite Swappers December Reveal

I know this is a little late in posting but better late then never. I wanted to share with you the cards from our last swap in December. This challenge was to create any card with at least one snowflake on it. Some of us put only a one snowflake and others used tons. They all looked great!

I just wanted to show a close up of my own card. It took quite some time to finish these as each element needed to dry in order to move onto the next. I used a Bella Stamp, Glass Glaze for the snow on the bottom, stickles in different colours, white flock for the Santa hat and lots of glitter.

My in-laws Gift

Every single year I always find it hard to find something perfect for my in-laws so this year I thought since the birth of our newest baby nephew Brody that we (both families) would get together and take pictures for them. We had a wonderful time and I can tell you it was the best gift they could have received. My mother in-laws face said it all. I was so happy that we were able to do this for them together as a huge group. The boys behaved themselves and I am so happy with all the pictures we got. I have a CD and am able to print what I want. Let me tell you I have already worked it out but printing all of them a few times.

This one is my favorite one of my sister in-law Nancy and I. I really love that we had a professional picture done of both of us together.

My Sad Christmas

It's with a very sad heart I write this entry. I never in a million years would have thought my birthday gift this year would be a plane ticket to go see my dying aunt. Things moved so fast that it went from bad to worse. On Christmas Eve I received a text message from my cousin Jenny saying that her mom (my aunt) was not doing well and she had gone into a comma. I made sure to call my cousin Nelia in Bermuda to see what was going on before leaving for my in-laws. She mentioned that my aunt only had hours to live but did not know if it was hours as in two or hours as in 24-48.

As we drove up to Oshawa, Steve and I talked about my aunt and something inside our hearts we knew that the next 24 my dear aunt would leave us. We sad down to a beautiful meal my poor mother in-law made after going to work all morning and I received a text message again from Jenny. I asked everyone to excuse my checking my blackberry but because of my aunts condition I needed to check. My heart sank at the words I was reading on the screen. My aunt had just passed at 4:45 pm Canadian time (5:45 pm Bermudian time). From that moment on life changed. Christmas Eve has changed forever.

My beautiful aunt was a true angel. She did not deserve to die at 57.

We are getting closer

to Christmas eve. The boys are getting excited and can't wait to open up their gifts. Steve and I have opted not to exchange gifts this year. I hope he keeps to his end of the bargain. I really do not need a single thing. I am thankful for that.

Today we had our friends over Alexander, Jaden, Noah and their mothers for an afternoon of DS playing for the boys and some coffee for the moms. We really enjoyed having everyone over and remembered the time our little ones were so small we could just have them laying down and just enjoyed talking about our little men. Now they run around, play hide n seek and scream at the top of their lungs. lol How things change after 6 years. It's unbelievable how much they have grown.

Tomorrow we are heading out to Oshawa to spend Christmas Eve with the in-laws. I am excited to see them as I haven't been able to see them in 2 weeks since leaving for Bermy. This is the first year we will be going out on Christmas Eve as it is usually spent here at the house with just hubby and the boys. Steve is upset he will not be eating his Chinese take out but things need to be changed up a bit. My sister in-law said she was heading up there for the eve so we decided to join them and have a good evening with my in-laws.

I should get some rest as I am super tired tonight. I have a few things to do tomorrow and will make sure to come and post some pictures.

Dr. Poon 30 Week Update

Went to my appointment this morning and with everything going on I still managed to loose 3 pounds. I am at a total of 57.5 pounds lost. Dr. Poon told me that 40 of those were just plain fat and 17.5 came from losing water. I am so proud of myself. I know I could do anything I put my mind to and right here I am proving it to myself.

I have another 16 pounds to go to hit my next goal of Rose's challenge. I have another month and a half to lose the 16 pounds and feel that I could do it.

I will post another updated picture of myself soon. Thank you all for the wonderful encouragement and kind words.

A little of this and a little of that

Lately I have been all over the map. My head is certainly not into Christmas this year. Since my Bermuda post I just wanted to give you all an update on what's going on. The tree went up because my wonderful husband made sure that it did or else I know that would be something that would not happen. Thank you Steve it truly looks beautiful with just my most special ornaments. He knew that I would need them most this year.

First day home from school for Tristan and he and his brother are driving me nuts. All he wants to do is play video games and I tell him that it is more important to just play with other things and enjoy life instead of being stuck to the tv. Tomorrow little Ethan will be going to daycare and Tristan will spend the day with me. I think we might go and watch a movie or something just to use up some time since we have another until January. Oh Lord help me. lol

Tomorrow I have an appointment with Dr. Poon. I am looking forward to it because after the trip to Bermy and not being able to stick to it while down there I am glad that I have straightened myself and got right back on it as soon as I steeped foot in Toronto. I did not recall that Bermuda is all about soul food. A reason I love it so much because everything is about great food, family, friends and stunning beaches. I am missing my family.

My aunt is still in the same condition but worse. She is now waiting for her time to go. My heart goes out to her and also to all the rest of the family that is there. It broke my heart to speak with my cousin Nelly. She is hurting right now and I wish that I could help but from afar there is really nothing but praying and thinking about them all. My love goes out to all of you. I think about you every single moment of the day.

Yesterday I spent the morning with my sister. We decided to do a belly cast for her. Little Chloe was causing some trouble in her tummy and the cast ended up being a little off. I think my sister looks beautiful pregnant and can't wait for Chloe's birth. I'll have to post pictures once we finally are able to paint it.

On Friday it was my 33rd birthday. I received a lot of shout outs and was thankful to everyone for remembering. My boys took me to Mandarin (Tristan's choice). My parents came and spent the afternoon with me. We had lunch together. I think this is starting to be a tradition and I just love the fact that my father was able to be with Ethan for a while. Being with the boys takes his mind off things. He really needs this. My children keep him going. He is so excited about Chloe's birth.

On Saturday my sister and Jay took us out for dinner. Let's just say there is a reason why we go not go out with the boys often unless of course it's Kelsey's. Steve and I got the honour of being asked to be Chloe's godparents. I could not be happier. Steve is delighted as he will be godfather to two beautiful little ones this year. Brody his brother's little boy and now Chloe. We are going to have quite the year this upcoming year. I can't wait. My sister and her husband got me my digital frame. I can't wait to set it up. It's going to make me happy every single time I look at it.

Right now outside there is a very light snowfall. The snowflakes are just beautiful. It's interesting how you remember to take some time out to remember to do the little things in life. Before the end of this year I will be writing my will, creating a bucket list and also remembering to tell everyone in my life what they mean to me.

How life changes....

from one moment to the next. I know I have been MIA in the last week and a half. I expected to get ready for Christmas and also to bill all my customers for the last few weeks of work but instead I found myself on a plane to Bermuda. Got a call from my dad on Saturday to say that my aunt was in the hospital and she was not feeling well. He was talking about flying out to see her on Thursday and I thought ok I have some time to get a flight out there and be able to see my aunt. Checked some online fares and continued with my day with my aunt always at the back of my head. Something was just not right as I talked to her just 3 weeks before and she sounded fine. In my heart I knew that this story was one that was not told in whole so I called my mother and sure enough she let it slip that she was flown back to Bermuda from Boston on a air ambulance instead of a regular plane. My heart hit the floor because I knew the next call I made would be to my cousin Nelia. She would tell me exactly what was going on. I called and she told me straight out that I needed to get there fast and that she prayed that I arrived and my auntie would still be with us.

My life at this moment was put on hold because I was stuck in a very hard place. My sister is pregnant and my parents had asked me to not say a word of what was going on in Bermuda. I did not agree and thought I would not make it thou the next day without telling my sister something. So I got on the computer at 11:39 pm the moment I got off the phone with my cousin and booked two flights out for myself and my dad. Our flight was to leave Toronto at 8:30 am Monday morning. I got into bed and slept for a total of 3 hours before getting up and having my sister pick me up for Ste. Anne's Spa. The spa has always been a beautiful place but I held the guilt of not telling my sister what she needed to know. It was eating me up inside. Then to have to hold back the tears which I had inside of me was an even bigger task. I could not hold this inside me so I told her that my aunt was sick in the hospital with a small lung infection and that she would be alright. Having the words come out of my mouth were the hardest part because I knew that it was somewhat true but not totally. I did not know what I was up against in Bermuda. To my luck I got an reaction to one of the creams they placed on my face and was able to let all my feels out in the lobby of the spa. We placed cold towels and after about 2 hours I started feeling better. Arrived home at 7pm and said goodbye to my sister with yet another lie that I wasn't going to be around in the next couple of days and to just PIN me on my blackberry. Got inside and cried because I knew that this wasn't the case. Packed my bag and went to bed for 3 hours. Up at 5 am and headed to the airport.

We arrived in Bermuda at 12:10 Bermudian time. We headed straight to the airport. When I walked into the room you could not imagine my heart when I saw my beautiful aunt who no longer looked like herself just a few months before. She said my name and said my father's name and told us she wasn't going to die. No one should have to go thou this. My heart went out to her. We stayed at the hospital and did not leave her side. I stayed by myself the first night only to have the worse night she ever had. She took a turn for the worst and I stayed up with her all night. She was still not saying much but did say she loved me and smiled. I told her I loved her and we were going to get thou the night and talk again in the morning. We did not sleep a wink and I just didn't know what to do to help her. It was a tough situation but I was glad that I was able to spend this time with her. She asked me about my brother and sister and that was it for the talking. 7am everyone came back and noticed the change from just a few hours before. What a hard morning to see her go thou all of this.

My cousin's husband Joe took me back to his house to get a shower and eat something because I hadn't eating anything since I arrived. As we were finishing our meal and just getting ready to chill out for a little while the phone rings and we were told she only had a few hours and to rush back to the hospital. At this moment the car could not drive fast enough to get there. We arrived and found her in even worse off shape then what I left her just 2 hours before. At this point I told my father that I could not lie anymore and that I was heading into the hallway to tell my brother in-law that he had to tell my sister what was happening. This was all going too fast. I really felt bad for my sister as she was taking the news hard.

The next few days were hard to watch and also know that within a few days we would be heading back home. Thursday arrived and we went to the hospital for one last time to say good bye. I felt so bad for my father as he had a hard time letting go. He went back 3 times and cried all the way home on the plane.

I have been back home for 2 days now and I am always thinking about my aunt Val. I have been calling offen and the newest update is that she is still suffering. I pray that God takes her and lets her be at peace. This Christmas will certainly be a different one. Thanks for letting me let my feelings out.

Josh's ABC Album

Not sure if you all remember me writing about a little boy who's story is a sad one. He drown right in front of his father and has been having a very hard time since the incident. A lady in the scrapbook community who knows the family asked for some help in getting an ABC album together for Josh. I jumped at the chance to help out this special little boy. Today I remembered to go and check her site and sure enough the album is posted along with pictures of her son and Josh together. It makes me happy to see that this little boy got a album that he could use for his therapy. May he be blessed.

Dr. Poon 28 Week Update

It's been 28 weeks and I can honestly say I can see myself doing this for another 6 months. Christmas will be hard as there are always sweet treats laying around and temptations all over the place. I guess I have to stick to my guns and just say no. We will be at my in-laws on the 24th and my parents for a very quick lunch on the 25th. I am doing a wedding so I have explained to my mother lunch has to be about 1 hour and then I have to leave. She totally understands and has been so good about it all.

I went into the office today for my appointment and the place was buzzing with people. I have never seen the office so busy. It was crazy. I stood the whole hour waiting for my appointment. I should have just walked the halls and had them come call me when they were ready.

So I get weighted in and sure enough I gained half a pound. Dr. Poon wants me to continue writing my food journal. I really do not think it's anything I ate it's got more to do with drink too much water because my water levels were very high. I did lose 2.5 pounds of fat. That made my day. I see the doctor in another 2 weeks and am hoping that I could hit my 60 pounds off goal that I have set for myself.

I have a bet with Rose going. We need to loose 30 pounds by mid February. I have another 25 to go. I think I could do this. If she wins I take her out to dinner and if I win she is taking me. If we both get there we are using her husband's credit card to pay for our meal. You see he got himself into some trouble so we decided to get him back this way. I know we are sneaky.

I better get going as I am tired and want to get an early start to tomorrow. I have my office area to clean up and want to get some pictures of the boys uploaded to Costco.

A quick Hello

Just wanted to come on tonight before going to bed to say I had a good day today. Picked up some poinsettia's for the hospital. All ready decorated them all and sprayed them with glitter. Even got the chance to stop by A&E to do some shopping. I had to use up my $50 off coupon. I ended up picking up some new PJ's (with bling on them), bras and some socks. I am feeling so happy because I have officially dropped down 2 full sizes. Tomorrow is going to be a busy day. I am heading over to see Dr. Poon in the morning I'll let you know what happens. I think it's either the scale or me who is having a problem. I shouldn't complain too much. We will see what happens tomorrow. I'll make sure to come in and post.

Off to go let my nail polish dry. Yes, I paint my nails just before going to bed and sleep with my hands on my stomach so that I will not smear the polish. Works every time. I wake up and they are shinny and ready to go. You should try it. Only tip I have is to use a really good fast drying top coat. I recommend Essie. It's about $10 - $13 a bottle but totally worth it.

Special Birthday Card

One of my very dear friends is having a special birthday this year. I won't mention how old because like she puts it I will get there one day too. I just keep reminding her that she still will be older than me then too. he he he

Alexis was over last week and showed me a stamp she purchased with this friend in mind. Lilac's if you refer to Croptopia have a special meaning to both of us. I asked her if I could just stamp it out once to make this special friend a card and she went ahead and did it for me. Thanks Alexis. I worked on this thing for like almost 2 hours by the time I was finished. I am so happy with the way it turned out and know that she is going to love it.
