Sweetness

This afternoon Ethan decided to use my bench as a reading table for his new reading system. He makes me laugh because he actually fits right in there and can sit there for a total of 3 minutes before he goes and finds another place to try and get into. He doesn't sit still for too long so watching him sit here for about 3 minutes works great for me. At least the bench is not only being used at night when I have to climb up it to get into bed.


Took my camera a hunting to see what my big boy was up to and sure enough I found him right into his DS. Dinha Lucy bought him a new game and this is what he was doing until the DS needed to be recharged. I thought that once the DS came into his life that poor Eeyore was going to be left out but sure enough Eeyore still goes everywhere and is sitting there right along his leg while he is playing. I am sure he will be taking him to university with him.

While reading my Canadian Living magazine today I was looking at the recipes and came across Chocolate Cappuccino Brownie Cheesecake Squares and decided to treat my family to some baking. I knew my sister was going to stop by so I wanted to give her a little something to just show her that I was thinking about her.
Only problem is that the cheesecake part of the brownie ended up on the bottom. I do not know how that happened but hey they are still very yummy.


Just wanted to show the design I came up with for giving them to my sister. She is having friends over tonight so I wanted her to have a nice little treat to share with them. I'm sure they will get a kick outta these. I cut the parchment paper into squares then gathered them at the top and folded in the ides. Wrapped them with a ribbon and hand stamped a tag with enjoy, distressed the edges and there we go a treat good enough to entertain with.

Chocolate Cappuccino Brownie Cheesecake Squares

Brownie:
3 oz bittersweet chocolate chopped
1/3 cup butter
3/4 cup granulated sugar
2 eggs
1 tsp vanilla
3/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt

Cheesecake:

1 cup cream cheese, softened
1/3 cup granulated sugar
1 egg
1 tsp instant coffee granules
1 tsp vanilla
1 tbsp all purpose flour

  • In a large heatproof bowl over saucepan of hot (not boiling) water, melt chocolate with butter; let cool slightly. Whisk in sugar, eggs and vanilla. Stir in flour, baking powder and salt. Set aside.
  • Cheesecake: In a bowl, beat cream cheese with sugar until smooth; beat in egg. Dissolve coffee granules in vanilla; add to cheese mixture. Stir in flour.
  • Remove 1/2 cup (125ml) of the chocolate batter to small bowl. Spread remaining batter in parchment paper-lined 8-inch (2L) square metal cake pan. Spread cheesecake batter over top. By spoonfuls, drop reserved chocolate batter over top. Run knife through batter to make decorative swirls.
  • Bake in 350 degrees (180 F) oven until tester inserted in center comes out with a few moist crumbs clinging, 30 to 35 minutes. Let cool in pan on rack. Refrigerate for 4 hours. (Make-ahead: Wrap and refrigerate for up to 2 days.) Cut into squares. Makes 20 squares.

I just love the little dessert surprise packages Veronica! What a great idea...you always have such beautiful presentation...my wedding is going to blow people away!!! I love the comment about Eyore going to university hahaha!...so cute!
