Dr. Poon: My Chinese Stir Fry



Ingredients:

3 tablespoons Olive Oil
3 cloves Garlic
1 package beef strips or cut yourself
1 lb. brown mushrooms
Jr. Bok Choy
1 cup Organic reduced sodium chicken or beef broth
1/2 teaspoon crushed chilies
3 tablespoons sodium reduced soy sauce
1 1/2 tablespoons flour *may be subbed with something else*
Fresh ground pepper
Fresh parsley


Directions:

1. Add the Olive oil to a pan. Add garlic and beef and cook for about 5 minutes stirring the meat so it cooks on both sides.
2. Cut mushrooms in quarters and add to pan along with jr. bok choy. If using the large bok choy just chop it to make it into smaller pieces.
3. Add your chicken or beef broth and cover. Let cook for another 4 minutes.
4. Add crushed chilies (more if desired), soy sauce, ground pepper to taste and parsley. Cook for another 4 -5 minutes until bok choy and mushrooms are cooked.
5. Add the flour to the top and stir the ingredients together. Cook for 2 minutes just to cook out the flour.


*Notes:
This is a great dish to prepare because first of all it only cost a total of $11.00 and serves 3-4 people.

If you are the only one on the diet it's a great dish to make for the rest of the family. Just make plain white rice or noodles and add this to it. My hubby loves it. He enjoyed his with rice.
