Dr. Poon: My Thai Spicy Chicken and Greens

Thai Spicy Chicken and Greens



Ingredients:
  • Boneless, Skinless Chicken Breast Cubed
  • 2 Cloves Garlic (chopped)
  • 5 Stalks Celery (chopped about 2" in length)
  • 2 Green Bell Peppers (sliced)
  • 2 tbsp Thai Sweet & Spicy Sauce *low sodium
  • 1 tsp Crushed Chillies
  • 2 tsp Olive Oil
  • 4 tbsp Water
  • 1 tsp Club House No Salted Added Chicken Seasoning
  • 2 tbsp Kikkoman Less Sodium Soy Sauce
Directions:
  1. Add 1 tsp olive oil to a a pan with 1 clove chopped garlic, celery and bell peppers. Cook until desired tenderness. I like mine crispy.
  2. Once the veggies are cooked remove to a dish.
  3. Add last 1 tsp olive oil to same pan along with the last clove of chopped garlic. Add chicken and cook until chicken is no longer pink. This should take about 10 - 15 minutes stirring the chicken occasionally.
  4. Add the veggies back into the pan and add all other ingredients including water. Let cook together for about 5 - 7 minutes and it will be ready.

This one is a a little spicy but tastes so good. A nice light meal with just enough meat and veggies for all to eat.
