Dr. Poon: My Lemon Chicken with Mushrooms and Asparagus

It's Thursday and I can say I want this week to be over. I have a busy week next week but am looking forward to that weekend. I along with my mother will be hosting my sister's baby shower. I am so looking forward to it as I have some surprises up my sleeve.

Hubby is returning tonight from being away on business yet again. I guess while he has been away I've had to keep busy so I created another Dr. Poon approved meal. I think my next step is going to be making some other types of dessert. I will need more time with that one but for now here is this one.


My Lemon Chicken with Mushrooms and Asparagus



Ingredients:
  • 3 Boneless, Skinless Chicken Breasts
  • 1 package sliced mushrooms
  • 3 stalks green (spring) onion
  • 1 bunch asparagus
  • Black Pepper
  • Mrs. Dash Lemon Seasoning
  • Olive Oil

Directions:

  1. Add olive oil to skillet. While the oil is heating up add mrs. dash to both sides of chicken. Cook chicken on both sides.
  2. While the second side of chicken is cooking move the meat to one side of the pan and add mushrooms to pan. Add a little more olive oil and mrs. dash seasoning to mushrooms.
  3. At this point add water to a pan and cook your asparagus until fork tender.
  4. Once chicken is ready remove from heat and cut against the grain in slices. Remove cooked mushrooms and add to plate.
  5. At this point the asparagus should be cooked. Toss with a little olive oil and mrs. dash lemon seasoning.

This is a great meal for 3 or you can store and re-heat and enjoy again. I made this one batch and ate it for lunch, dinner and again for lunch the next day. If you want you can add a couple of splashes of red hot sauce to the chicken.

Can't believe I am typing this but it is now snowing outside my window. This is officially the first snow fall this season.
