Dr. Poon: My Chicken Pesto

My Chicken Pesto



Ingredients:

  • 1 Large tbsp 95% fat free cream cheese
  • 1 tsp pesto (made fresh) please see below for recipe
  • 1 BBQ'd chicken breast
  • Mashed cauliflower
  • black pepper
  • low sodium chicken broth
  • 1 tsp fresh chopped parsley

Directions:

  1. Place cauliflower in pan and cook until tender. Take out and mash with a masher just like you would potatoes until smooth.
  2. Cut your (pre-cooked) chicken breast and place aside.
  3. In a sauce pan add the fat free cream cheese, pesto and some chicken broth and combine with a whisk. Using a whisk will allow your sauce to come together. Cook for about 3-5 minutes and add your chicken until coated. At this point add your black pepper to taste.
  4. Place your mashed cauliflower on a plate and add your chicken and sauce over the mash.
  5. Garnish with parsley.

This dish is nice and light. On those days where you think your missing out on something mashed this is the perfect dish for you. I enjoyed eating it and can not wait to make it again.
