Ingredients:
- 1 Large tbsp 95% fat free cream cheese
- 1 tsp pesto (made fresh) please see below for recipe
- 1 BBQ'd chicken breast
- Mashed cauliflower
- black pepper
- low sodium chicken broth
- 1 tsp fresh chopped parsley
Directions:
- Place cauliflower in pan and cook until tender. Take out and mash with a masher just like you would potatoes until smooth.
- Cut your (pre-cooked) chicken breast and place aside.
- In a sauce pan add the fat free cream cheese, pesto and some chicken broth and combine with a whisk. Using a whisk will allow your sauce to come together. Cook for about 3-5 minutes and add your chicken until coated. At this point add your black pepper to taste.
- Place your mashed cauliflower on a plate and add your chicken and sauce over the mash.
- Garnish with parsley.
This dish is nice and light. On those days where you think your missing out on something mashed this is the perfect dish for you. I enjoyed eating it and can not wait to make it again.
